After completing The Mines of Moria you can replay it in story mode or free play. Play story mode again and, after a minute or two, pause the choose "Quit to Middle Earth" select save and continue. This unlocks the trophy without having to actually play the whole level and finish in under 15 minutes. This also works for the Trophy for finishing a level in co-op.
