'About face' is when your character whips around 180 degrees quickly. To do it, hold Analog-stick Away to start walking backwards + A for a short time. Then, release A when your character turns around to perform it. To avoid frag grenades or retreat somewhere quickly, keep holding A and Marcus will "Roadie Run" in the opposite direction.
